The Pancake Paradox

I was lying in bed this morning being the very embodiment of a lazy Sunday when I saw a picture of pancakes online. I knew I wouldn’t be satisfied until I was eating my own pancakes. So, I got myself out of bed and made some. Actually I made about 20 pancakes.

I find I am crossed with the same issue every time I make pancakes from scratch: too many pancakes! For this reason, I usually prefer to buy just-add-water pancake mix because I can add just a tiny bit of water to make the perfect single serving amount of batter. The from-scratch recipe I found online today seemed like a relatively moderate one, it only called for one egg. How was I to know it was going to yield a never-ending supply of pancakes? (Looking back, the recipe did say it made 8 servings, but I was still in a Sunday morning sleep haze when I started this adventure, so I can hardly be held accountable for my sub-par readery.) Even if I wanted to make a smaller batch, how do I split one egg? I can’t! It’s impossible!

In the end, I made the full batch of this pancake batter and I ended up with roughly 20 pancakes. Unfortunately, NONE of my roommates wanted ANY pancakes! It’s been 10 hours and I still can’t believe it. Regardless, herein lies my dilemma: do I make up all the batter and put the extra pancakes in the fridge for later? OR do I only make the number of pancakes that I want in that moment and save the rest of the batter for later? Seriously, I’m actually wondering what is the better option. I feel like leaving extra batter will give you fresher pancakes when you do get around to making more, but will the fact that you have to MAKE them discourage you? Would it be better to just throw a few cakes in the oven to warm up?

  1. Make them all, warm leftovers in oven. As soon as you mix wet and dry the baking soda is activated and if you leave it too long it won’t leaven the pancakes any more. Also Eddy and I recently learned that leaving lumps in the batter equals fluffier pancakes with no lumps in the cooked product. The more you know!

  2. You can make less and still use one egg, just adjust the milk accordingly. Warm in toaster.

    Also, I don’t even like pancakes but after I read this I really want some!
